A few days ago, while looking for ways to improve my morning coffee, I came across a viral video of a home barista who managed to make a perfect espresso with an Italian moka pot. His technique was so simple that I decided to try it. Here is everything I learned.
How to Make Coffee in an Italian Moka Pot (Step by Step)
The first thing I discovered is that the secret is in the water. It should be neither cold nor boiling: the ideal is to heat it to about 90°C before pouring it into the base.
The ground coffee should be fine, but not as fine as for espresso. A texture similar to beach sand works best. Fill the filter without pressing, just leveling it with your finger.
The heat should be medium-low. If it boils too quickly, the coffee comes out bitter. When the “gurgling” sound begins, remove it from the heat and serve immediately.
How to Use an Italian Moka Pot Without Ruining the Coffee
Many people make the mistake of washing the moka pot with soap. Big mistake! The barista in the video explained that it should only be rinsed with hot water to preserve the natural oils of the coffee.
Another key trick: preheat the base with hot water before adding the coffee. This prevents the metal from absorbing all the heat and burning the beans.
And something few people do: after serving, the leftover coffee should be emptied out. If it stays in the moka pot, it oxidizes and makes the next use bitter.
The Worst Mistakes When Making Coffee in a Moka Pot
The most common one: overfilling the filter. If the coffee is compacted, the water doesn’t circulate well and the result is a cloudy, over-extracted liquid.
You also shouldn’t use old coffee. After 15 days from roasting, the beans lose a large part of their aroma. The ideal is to grind it just before preparing it.
And pay attention: you should never leave the moka pot on the heat after it finishes. That last burnt spurt ruins all the flavor.
Why Does Italian Coffee Taste Better?
The answer lies in the pressure. Unlike a French press, the Italian moka pot forces water through the coffee, extracting more body and crema.
But beware: it’s not the same as a professional espresso. The homemade moka pot gives a coffee that’s more intense than a press, but less concentrated than a bar machine.
The final secret: try, adjust, and find the right point. As the barista in the video said: “The Italian moka pot forgives, but only if you listen to it”.
