A lentil recipe that stands on its own

There are dishes that need no introduction, and stewed lentils are one of them. This recipe starts from the classic spoon-cooked comfort food, but adjusts times and proportions so the result turns out creamy, flavorful, and without that watery broth that ruins so many pots. With pantry ingredients and a regular pot, you’ll have food for two days.

Ingredients for 4 generous servings

  • 400 g dried pardina lentils (better than the canned ones)
  • 1 medium onion, 1 large carrot and 1 green pepper
  • 2 garlic cloves and 1 bay leaf
  • 1 teaspoon sweet paprika (off the heat, so it doesn’t turn bitter)
  • 1 medium potato and 1 chorizo or piece of pancetta (optional)
  • 1 liter of water or vegetable broth
  • 4 tablespoons extra virgin olive oil, salt and a pinch of cumin

Method: order matters more than speed

Soak the lentils the night before only if they are very hard; today’s pardina lentils cook well without that step. Heat the oil in a wide pot and sauté the finely chopped onion, carrot and pepper for about eight minutes, until the vegetables lose their shine. Add the sliced garlic and stir for one more minute.

Take the pot off the heat, sprinkle in the paprika and cumin, and immediately return it to low heat. This step prevents the spice from burning and adding that bitter aftertaste that is so hard to correct. Then add the rinsed lentils, the potato in chunks, the bay leaf and the sausage if using. Cover with the hot broth, raise the heat until it comes to a boil and lower to a gentle simmer.

Let it cook for 30 to 40 minutes. Stir with a wooden spoon every ten minutes, scraping the bottom, and add hot water if needed. Salt goes in at the end: if you add it at the beginning, the skin of the legume hardens and takes longer to soften. When they are tender but whole, turn off the heat and let rest covered for ten minutes; that’s when the stew finishes coming together.

Adjustments that change the result

If you’re after a vegetarian version, replace the sausage with a tablespoon of miso diluted in the broth at the end: it adds depth without meat. For a thicker texture, mash a couple of tablespoons of lentils against the side of the pot. And if you have leftovers, it’s even better the next day, because the flavor settles. Serve with a drizzle of raw oil and dense-crumb bread.
