Stewed Lentils Recipe: Tradition and Nutrition

A recipe that smells like home

Few preparations stir up as many memories as a pot of lentils simmering slowly. This recipe combines the simplicity of pantry ingredients with a deep, satisfying result—ideal for cold days or for those looking to eat better without overcomplicating things. You don’t need advanced techniques: just a pot, patience, and the right order when adding each element.

Ingredients for four servings

  • 400 g dried pardina lentils
  • 1 medium onion
  • 2 carrots
  • 1 green bell pepper
  • 2 garlic cloves
  • 1 ripe tomato
  • 1 bay leaf
  • 1 teaspoon sweet paprika
  • 80 ml extra virgin olive oil
  • Salt and black pepper
  • 1.2 liters water or vegetable broth

Step by step

1. Prepare the base

Finely chop the onion, pepper, and garlic. Grate the carrots and tomato. Heat the oil in a large pot and sauté the onion and pepper for eight minutes over medium heat, until they soften.

2. Build in the flavor

Add the garlic and stir for just thirty seconds: if it browns too much, it turns bitter. Add the grated tomato and carrot, cook for five more minutes, and sprinkle in the paprika right before pouring in the liquid so it doesn’t burn.

3. The cooking

Pour in the broth, add the bay leaf and the rinsed lentils. Bring to a boil, lower the heat, and let it simmer gently for 35 to 45 minutes. Stir occasionally and add hot water if it thickens too much.

4. The finishing touch

Season with salt and pepper at the end, once the legumes are tender; early salt toughens the skins. Remove the bay leaf, taste, and adjust. Let it rest for ten minutes off the heat: the stew gains body.

Keys to getting it perfect

Don’t soak pardina lentils: they fall apart easily. If you use the verdina variety, they’ll need a bit more time and perhaps a two-hour pre-soak. Homemade broth elevates the result, but water with a pinch of cumin works too.

Variations and storage

You can add rice in the last twenty minutes for a one-pot meal, or stir in chorizo and morcilla if you’re after a heartier version. Store leftovers in the fridge for up to three days: they taste even better the next day. To freeze, do it in portions and thaw in the fridge overnight.

Nutritional value

Lentils provide plant protein, soluble fiber, and non-heme iron. Combined with vitamin C—found in the pepper and tomato—they improve iron absorption. It’s an economical, filling recipe that’s suitable for vegetarian diets if made with broth free of animal products.
